    And I'm James. I'll be honest, it was yesterday. A sad half of a sandwich and some old salad. Today's topic is food waste, and whose problem it really is.

    Thank you, Sara. It's great to be here. In my job, I see good food in the bin every single week, and it hurts me.

    And our second guest is Emma, a researcher in Melbourne who studies how households waste food. Emma, welcome.

    Thanks, James. Please don't feel bad about your sandwich. Almost everybody wastes some food. The question is how much, and why.

    Let's begin with home. Emma, some estimates suggest that around a third of all food in the world is lost or wasted. Is that number believable?

    It's in the right area, yes. Different studies give different numbers, but they agree that it is a huge amount. And in rich countries, a lot of it happens in our own kitchens.

    Most people aren't, James, and that's the problem. Nobody plans to waste. We buy too much because the offers look good, or because we imagine a perfect week of home cooking.

    That's so true! I buy a bag of spinach with big plans, and then a week later it turns into green water at the back of the fridge.

    In many Arab homes there's another reason, and it's about pride. We want the guest to see a full table, so we cook for twenty when ten are coming.

    I love that generosity, Bassam, I really do. But I think we can keep the generosity and reduce the waste at the same time.

    Emma, what about those dates printed on packages? I think I throw away milk that is perfectly fine.

    Great question. Many people confuse two different labels. A use by date is about safety, but a best before date is mostly about quality. Often food is still good after it.

    So the best advice is to look, smell, and use your common sense, not just obey the date?

    Exactly. For safety rules, of course, follow the label on things like meat and fish. But for bread, rice, vegetables and many dairy products, your eyes and nose are very useful tools.

    Can I disagree a little? I think it's easy to blame families. Sometimes the shops make it too easy to buy too much, and too hard to buy just a little.

    That's a fair point, and we should look at it.

    That takes us nicely to businesses. Bassam, you run a restaurant. What does waste look like in your kitchen?

    It's mostly in three places. First, food that customers leave on the plate. Second, food that we prepare but don't sell. And third, the small things, like vegetable skins and the ends of bread.

    And I suppose the portions are part of it? In some restaurants, the plate is so big that nobody could possibly finish it.

    That's right. We changed our menu last year. Now customers can choose a smaller size, and we ask before bringing extra bread. Our waste dropped a lot, and nobody complained.

    That's the kind of simple change that research supports. People often feel they must finish whatever they are given, so smaller default portions are a clever solution.

    Exactly, and it saves us money too.

    What about the food that you prepare but don't sell, Bassam? Where does it go?

    We've worked hard on that. Safe, unserved food goes to the food bank, and they pass it to families the same day. It makes me proud, but it took time to build trust and follow the rules.

    And supermarkets? I've heard stories about shops throwing away vegetables because they look strange.

    That does happen. A carrot with two legs tastes exactly like a straight carrot, but some shops reject it. Some chains now sell odd shaped produce at a lower price, and customers like it.

    I would happily buy the carrot with two legs.

    To be fair to supermarkets, they also have a hard job. Customers expect every shelf to be full until closing time. A full shelf means some things will not be sold.

    لكي نكون منصفين مع المتاجر الكبرى، فمهمتها صعبة أيضاً. يتوقع الزبائن أن يكون كل رف ممتلئاً حتى وقت الإغلاق. والرف الممتلئ يعني أن بعض الأشياء لن تُباع.

    I see it a bit differently. Shops have a lot of power. They decide how food is displayed, packed and priced. If a big supermarket changes a rule, millions of people feel it.

    أراه بشكل مختلف قليلاً. للمتاجر قوة كبيرة. هي تقرر كيف يُعرض الطعام ويُغلَّف ويُسعَّر. وإذا غيّر متجر كبير قاعدة ما، يشعر ملايين الناس بذلك.

    I accept that, Emma. I think we are both right.

    So we have a polite disagreement. Bassam says it is a shared problem, and Emma says business should lead. James, where do you stand?

    I'm somewhere in the middle. Shops should do more, but customers also vote with their wallets. If we all buy only perfect vegetables, the shops will only sell perfect vegetables.

    Let me tell you about my family, because this is where my heart is. When we host a big meal at Eid, my mother cooks enough kabsa for an army.

    That sounds wonderful! And what happens to the leftovers?

    In the old days, a lot was thrown away. Now we have a plan. Before the guests leave, my sisters bring boxes, and every family takes some food home. Whatever is left goes to neighbours or the food bank.

    I love that, because it keeps the celebration and the generosity. Does your mother mind the change?

  50. Bassam

    At first she was unsure. She said, what will people think if I give them boxes? But now she's the leader of the box project. She even labels them with the date.

    في البداية كانت غير متأكدة. قالت: ماذا سيظن الناس إذا أعطيتهم علباً؟ لكنها الآن قائدة مشروع العلب. وهي حتى تكتب التاريخ عليها.

    Your mother sounds like a wonderful leader.

    My family is smaller, but there's a similar story. My grandmother had a rule that we never left the table until the plate was clean. I hated it as a child.

    That rule was common in my childhood too.

    Mine was the same! But isn't that rule a good thing, in a way? It taught us not to waste.

  55. Emma

    It's more complicated. Forcing children to eat more than they need can teach them to ignore their hunger. A better lesson is to take a small amount, and come back for more if you want it.

    That makes a lot of sense to me.

  57. Bassam

    I agree. At our house, we now serve in the middle of the table and let people take small plates first. The waste dropped, and the food is still always there.

    أتفق. في بيتنا الآن نضع الطعام في وسط المائدة ونترك الناس يأخذون أطباقاً صغيرة أولاً. انخفض الهدر، ويبقى الطعام موجوداً دائماً.

    Small plates first, I like that.

    What about leftovers in general? Some people hate them. I have a friend who says that food from yesterday is not real food.

    That's an attitude we need to change. Leftover rice can become fried rice, old bread can become toast or a pudding, and extra chicken can fill a sandwich. It's like a creative game.

    I may have to try that fried rice idea.

    In my restaurant, yesterday's rice goes into a special lunch dish that sells out. People think it was designed that way, and in a sense, it was.

    It's time for our Language corner. We heard some very useful expressions today, so let's explain three of them. James, can you start?

    حان وقت ركن اللغة. سمعنا اليوم بعض التعبيرات المفيدة جداً، فلنشرح ثلاثة منها. هل تبدأ يا جيمس؟

  64. James

    Sure. The first is leftovers. These are the food that remains after a meal and was not eaten. We always say leftovers in the plural. For example, we ate the leftovers for lunch.

    بالتأكيد. الأول هو البقايا. وهي الطعام الذي يتبقى بعد وجبة ولم يؤكل. نقولها دائماً بصيغة الجمع. مثلاً: أكلنا البقايا على الغداء.

  65. Emma

    The second is to vote with your wallet. It means to show what you support by choosing what you spend your money on. If you buy imperfect vegetables, you vote for them.

    الثاني هو التصويت بمحفظتك. ويعني أن تُظهر ما تدعمه بواسطة ما تختار أن تنفق عليه مالك. إذا اشتريت الخضار غير المثالية، فأنت تصوّت لها.

    Nice. I vote with my wallet every Saturday.

    جميل. أنا أصوّت بمحفظتي كل يوم سبت.

  67. Bassam

    And the third is to be fair to someone. It means to say something good about a person or group, so your opinion does not sound one sided. I said it about the supermarkets earlier.

    والثالث هو الإنصاف مع شخص ما. ويعني أن تقول شيئاً جيداً عن شخص أو مجموعة، حتى لا يبدو رأيك منحازاً لجانب واحد. قلته عن المتاجر الكبرى قبل قليل.

    Well said, Bassam.

    Let's talk about apps. I use one that sells surprise bags of unsold food from cafes at a low price. Emma, do those really make a difference?

    In Saudi Arabia, there are food banks and apps connecting restaurants with volunteers. A message goes out, a volunteer comes in a car, and the meals reach families within hours.

    That is a great use of technology.

    What about simple tricks at home? I'd love some advice that doesn't need technology.

    My top tip is to make a shopping list and check the fridge first. Second, plan meals around what you already have. Third, freeze things before they spoil. Bread, herbs and cooked rice all freeze well.

    Those are practical and easy. I like them.

    And I'll add one more, which is very British. Keep a Sunday soup day. Everything that is almost finished goes in the pot.

    A soup day is a brilliant idea.

    Teach children too. My daughter is nine, and she checks what is in the fridge before we shop. She's stricter than me, and she makes me feel guilty!

    وعلّموا الأطفال أيضاً. ابنتي عمرها تسع سنوات، وهي تتفقد ما في الثلاجة قبل أن نتسوق. إنها أكثر صرامة مني، وتجعلني أشعر بالذنب!

    I need a nine year old in my kitchen.

    That's lovely. I think children can be the best teachers sometimes.

    هذا جميل. أظن أن الأطفال يمكن أن يكونوا أفضل المعلمين أحياناً.

  83. Emma

    One more thing. We should be careful not to feel guilty all the time. Guilt doesn't help. Small habits, repeated every week, are what really change the numbers.

    We're nearly out of time, so let's wrap up. We started by asking whose problem food waste is, and I think the answer is that it belongs to all of us.

    Families can plan better, restaurants can offer smaller portions, and shops can accept odd looking vegetables. My own promise is to eat the sandwich before I forget it.

    My final thought is that sharing food is a beautiful tradition in our culture. Let's share it before it is wasted, not after. A full table is wonderful, but an empty bin is better.

    I'd say start small. Choose one habit this week, maybe checking the fridge before you shop, and see what happens. It's the easiest way to save money and help the planet at the same time.
